Ingredients
- 1 cup finely diced onion
- 1 cup finely diced carrots
- 1 cup finely diced green cabbage
- 1 cup finely diced red or green bell pepper
- 1 cup finely diced radish
- 1 cup finely diced tomatoes
- 1 cup of roasted and coarsely chopped peanuts
- Salt and pepper to taste
- 1 tablespoon freshly squeezed lime juice (1/2 lime)
Directions
- Mix all ingredients in large bowl except salt, pepper and lime juice.
- Add salt, pepper and lime juice, to taste.
- Chill and serve.
