Ingredients
- 4 (6-ounce) bone-in chicken breast halves, skins removed
- 2 teaspoons dried basil
- 1 teaspoon dried thyme
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 yellow pepper, diced
- 1 red pepper, diced
- 1 (16-ounce) can cannellini beans, rinsed and drained
- 1 (14.5-ounce) can petite diced tomatoes with basil, garlic, and oregano, undrained
Directions
- Place the chicken in an electric slow cooker; sprinkle with basil, thyme, salt, and black pepper. Add the red and yellow peppers, beans, and tomatoes. Cover with lid; cook on low-heat setting for 8 hours.

Need better instructions
Review on instructions only. Going to attempt to make this over the weekend. Instructions very vague. Especially at end, how to serve, can you cook on high in crock pot? If so how long. Can you use boneless breasts?

Hey Kim! Thanks for the feedback. Cooking on high in a slow cooker can tend to overcook the chicken breasts making them tough/dry. You can certainly use boneless breasts but still recommend cooking it on low for 8 hours. Serve depending on your tastes and dietary needs: side salad, green beans, roasted potatoes.
